Sweet Potato Casserole

This recipe was shared with me about 30 years ago by a very dear friend. It is delicious, it’s like having pie for supper. It goes wonderful with ham.
Ingredients
- 2 cups boiled, mashed sweet potatoes
- ½ stick margarine or butter, melted
- ¾ cup granulated sugar
- ½ cup canned evaporated milk
- 2 eggs. lightly beaten
- ½ teaspoon salt
- ½ teaspoon nutmeg
- ½ teaspoon cinnamon
- ½ teaspoon butter flavoring
- 1 teaspoon vanilla flavoring
Topping Ingredients
- ¾ cup crushed corn flakes
- ½ cup chopped nuts
- ½ cup light brown sugar
- ½ stick butter or margarine
Instructions
- Pre-heat oven to 325 F.
- In a medium saucepan, boil 4 sweet potatoes in their jackets until tender all the way through. Let cool until you can handle them and remove the jackets.
- Mash the potatoes and measure 2 cups and place in a mixing bowl.
- Melt the ½ stick of margarine and add to the potatoes along with the sugar, milk, eggs, salt, nutmeg, cinnamon, butter and vanilla flavorings.
- Spray a baking dish with Pam, then put the potato mixture into the pan.
Topping:
- In a small mixing bowl, combine the crushed corn flakes, nuts, brown sugar, and ½ stick butter or margarine.
- Spread the topping over the potato mixture.
- Bake at 325 degrees for 30 minutes
