This recipe was shared with me about 30 years ago by a very dear friend. It is delicious, it’s like having pie for supper. It goes wonderful with ham.
Ingredients
  • 2 cups boiled, mashed sweet potatoes
  • ½ stick margarine or butter, melted
  • ¾ cup granulated sugar
  • ½ cup canned evaporated milk
  • 2 eggs. lightly beaten
  • ½ teaspoon salt
  • ½ teaspoon nutmeg
  • ½ teaspoon cinnamon
  • ½ teaspoon butter flavoring
  • 1 teaspoon vanilla flavoring
Topping Ingredients
  • ¾ cup crushed corn flakes
  • ½ cup chopped nuts
  • ½ cup light brown sugar
  • ½ stick butter or margarine

Instructions
  1. Pre-heat oven to 325 F.
  2. In a medium saucepan, boil 4 sweet potatoes in their jackets until tender all the way through. Let cool until you can handle them and remove the jackets.
  3. Mash the potatoes and measure 2 cups and place in a mixing bowl.
  4. Melt the ½ stick of margarine and add to the potatoes along with the sugar, milk, eggs, salt, nutmeg, cinnamon, butter and vanilla flavorings.
  5. Spray a baking dish with Pam, then put the potato mixture into the pan.
Topping:
  1. In a small mixing bowl, combine the crushed corn flakes, nuts, brown sugar, and ½ stick butter or margarine.
  2. Spread the topping over the potato mixture.
  3. Bake at 325 degrees for 30 minutes
